Gratitude & Pumpkin Pie Mini Muffins

It’s so easy to get caught up in life’s stressors and forget to appreciate the beauty and love that surrounds us. I know for myself that I can have a heart full of gratitude when things are going smoothly… but as soon as it gets rocky I have a hard time staying connected to what I’m grateful for. This is something I’m continually practicing and is actually getting easier the more I do it. The amazing part about what I’ve experienced is the intense shift & change in perspective gratitude puts forth in my life. Even when I’ve felt like I was in a total crisis, taking a few moments to give thanks to even the smallest of things reconnects me to my center and radically alters my negative mindset to a more positive one.

I invite you to infuse more gratitude into your day. Try carving out just 5 minutes to sit in silence and stillness and reflect on a few things you are grateful for. I promise it will only bring more light into your life.

Also, in the spirit of gratitude, I’m grateful for these delicious pumpkin pie mini muffins I was able to bake for the holidays. They are paleo, gluten free, and low in sugar. Please let me know in the comments what you think. I’d also love to hear some of what you are grateful for in this moment.

Recipe:

Ingredients

5 eggs

1 cup pumpkin puree

1/4 cup coconut butter

1/2 cup coconut flour

1 tsp baking powder

1 tsp vanilla extract

2 tbsp pumpkin pie spice

10 drops of stevia extract or 1/4 cup honey

Instructions

  1. Preheat oven to 400 degrees

  2. Place muffin cups into muffin tin pan

  3. Mix all ingredients together until smooth

  4. Spoon batter into tins

  5. Bake for about 15 mins or until lightly browned
