Quick & Easy No-Bake Vanilla Nut Oat Squares

I love these for a convenient, nutritious, & super satisfying breakfast when I’m short on time. Make a big batch to store either in the freezer or refrigerator for the week ahead (also a super yummy dessert).

Ingredients:

1 cup Medjool dates, pitted (soaked for at least 15min to soften)⁣

1/2 cup raw almonds ⁣

3/4 cup gluten free rolled oats⁣

1/4 cup natural peanut butter⁣

1/4 tsp pure vanilla extract ⁣

Instructions:

1. Simply combine all ingredients in a food processor until you reach a nice cookie dough consistency (if using a blender, use a low speed setting).

2. Line a standard loaf pan with parchment paper & press dough firmly into the pan (make sure to press all the way up into the corners & flatten the surface).

3. Place in the freezer for about an hour to firm.

4. Slice into about 8 bars & Enjoy! ⁣
