Immune Boosting Carrot Ginger Soup 💛

Today I’m bringing you this super easy nourishing soup recipe that will give your immune system a big boost! Loaded with vitamins A, K, potassium, fiber, and antioxidants… this recipe is easy to make, quick, vegan, gluten free, and super creamy. Ready in 10 min!

Ingredients:

1 tablespoon olive or avocado oil

About 6-8 medium/large carrots chopped

1 chopped white onion

1 garlic clove, minced

1 teaspoon grated ginger

1/2 juiced navel orange

1/4 teaspoon ground turmeric

2 cups low sodium vegetable broth

Salt & pepper to taste

Instructions:

  1. Heat oil in a medium saucepan over medium heat. Add the onion and carrots and cook until softened, about 8-10 minutes, stirring often. Stir in the garlic and remove from heat.

  2. Put cooled veggies and the rest of the ingredients in a high speed blender and blend until smooth.

  3. Heat soup to your liking & add salt and pepper to taste. Enjoy!
