Low Glycemic Protein Cookie Bars (V,GF)

Did you ever have a cookie pie as a kid? Almost every summer at sleep-away camp my mama would send up a big box of cookie pie for myself and all my friends. After experimenting around in the kitchen a bit, I felt a sudden rush of nostalgia when taking a bite of this... for sure a much healthier spin then those nights we indulged on the cabin floor, but still super tasty! 

These cookie bars are perfect for the morning or after a workout. They are vegan, gluten free, and low glycemic. They will keep your blood sugar nice and stable and your tummy full. Feel free to mix and match ingredients to make your own version. :) 

Recipe (makes 10 servings):

  • 1/2 cup oat flour

  • 1/2 cup gluten free rolled oats

  • 2 scoops vanilla vegan protein powder (I used Sunwarrior)

  • 1/2 cup shredded coconut

  • 1/2 cup cacao nibs (or vegan chocolate chips)

  • 1/2 cup unsweetened vanilla almond milk

  • 2 tbsp coconut oil

  • 1/4 cup nut butter (I used almond butter)

  • 1/2 tsp vanilla extract

  • 2-6 drops liquid stevia (depending on desired sweetness)

  • Pinch of salt

  • Few shakes of cinnamon

*You may need to add in a little extra liquid in order to get the right cookie dough consistency

  1. Pre-heat oven to 350 degrees

  2. Mix together dry ingredients (flour, oats, protein, coconut shreds, cacao nibs, salt, cinnamon)

  3. Add in wet ingredients (almond milk, coconut oil, almond butter, liquid stevia)

  4. After you have a cookie dough consistency, transfer to a baking pan & spread evenly (I coated mine with coconut oil to prevent sticking)

  5. Bake for 20-25 minutes until edges get a nice golden brown color

  6. Remove in oven & let cool before cutting into bars (can be stored in airtight container for up to a week)
