A Halloween Treat! 👻 Chocolate Pumpkin Almond Butter Cups (V,GF)

You are in for a real treat today! These are super delicious and good for you. I whipped them up super fast this morning in spirit of this spooktacular day. I hope you enjoy!

Ingredients (makes 3 mini cups):

2 tbsp cacao powder

1 tbsp coconut oil

1 tbsp + 1 tsp maple syrup

2 tbsp pumpkin puree

1 tbsp almond butter

A pinch of Himalayan or sea salt

A dash of cinnamon

Directions:

  1. Make the chocolate: combine coconut oil in liquid form, cacao, 1 tbsp maple syrup, & salt until you reach a smooth liquid consistency

  2. Spoonful first chocolate layer into mini baking cups and place in freezer while proceeding to the next step

  3. Make pumpkin almond butter: combine almond butter, 1 tsp maple syrup, pumpkin, & cinnamon until well combined

  4. Spoonful pumpkin layer on top of chocolate layer

  5. Spoonful remaining chocolate layer on top of that

  6. Place in freezer for about an hour

  7. Top with raspberry or whatever fruit or candy you like
