High Protein Overnight Oats

Okay, this breakfast recipe is seriously amazing, and I'm not just saying that. Those of you who know me, know I love to live a super active lifestyle. I've struggled for a while to find a fast, convenient, & healthy breakfast that will leave me feeling satisfied and ready to tackle a morning workout or busy day. I've experimented with so many overnight oat recipes, but I finally crafted one that checked off everything on my list for go-to breakfast options:

βœ”οΈ  Easy to make, easy to eat

βœ”οΈ  Vegan, gluten free, added sugar free

Super Simple Recipe:

Ingredients:

1/4 cup gluten free rolled oats

1 tbsp buckwheat oats

1 tbsp chia seeds

3/4 cup unsweetened vanilla almond milk

1 scoop vegan protein powder (I used the Tone it Up brand vanilla flavor, found at Target. It's sweetened with monk fruit so that you don't have to add any extra sweeteners to the recipe, big plus!) 

1/2- 1 tbsp almond butter (feel free to replace with your favorite nut butter)

A few dashes on cinnamon 

Toppings: any fruit you prefer! (I used chopped apple here, but I also really love to top this recipe with raspberries and sliced banana).

Method:

1) Combine all dry ingredients in a glass jar or container: (I prefer to use glass so that plastics are not absorbed in my food) rolled oats, buckwheat oats, chia seeds, protein powder, cinnamon

2) Add wet ingredients: almond butter & almond milk

3) Stir really well to make sure everything is mixed in, especially the protein powder, which can often get stuck on the bottom

4) Close with a lid & place in the fridge

5) In the morning, simply throw your fruit of choice on top, & enjoy!
