Avocado Sweet Potato Buddha Bowl πŸ˜›πŸŒ±

Mmmm I LOVE Buddha Bowls! They are just a heavenly concoction of flavors and are so easily customizable. I threw this one together in less than 15 min… making it a perfectly filling & delicious midday munch.

Highlights in this bowl: loaded with antioxidants, vitamin, minerals, fiber, healthy fats, and is free from gluten, dairy, added sugar, oil, soy, corn, and anything artificial. All WHOLE FOOD PLANT BASED ingredients. Enjoy!

Ingredients:

1/2 sweet potato (baked or microwaved if short on time)

Handful of sprouts

2-4 cups salad greens

Handful of chopped fresh cilantro

1/2 Avocado

Raw Sauerkraut  

2 tbsp oil free hummus

1/2 cup canned sweet peas (no salt added)

Cherry tomatoes (halved)

1/2 lemon squeezed

Black pepper to taste

Instructions:

  1. Simply toss all ingredients together in a bowl

  2. Top with a squeeze of lemon & voila!
