Energizing Bliss Bites

Super simple, energizing, and good for you…

I absolutely love the simplicity of this recipe. Not only does it take under 10 minutes to make, but is also filled with ingredients that will leave you with a for sure pep in your step!

Sometimes I really need a quick energy dense pick-me-up, and I’ve often relied on overly priced store-bought “health” bars to satisfy my need… the protein/granola/energy bar industry is growing rapidly and it’s hard to find something that is affordable, organic, and made with quality ingredients. Not to mention the crazy amount of packaging/ plastic that goes into individually wrapping each bar. Especially this time of year when schedules can be hectic, it’s always good to have something quick and easy to stow in your purse/ backpack.

This recipe is vegan, paleo, gluten free, and free from all processed ingredients. I recommend making a big batch and storing them in your freezer for an afternoon pick-me up or pre/post workout snack.

Ingredients (8 Servings):

1/2 cup walnuts

6 Medjool Dates (without pits)

1 pinch of sea salt

3 tbsp of coconut shreds for rolling the balls in

Instructions:

1. Add dates, walnuts, & salt to a blender or food processor

2. Mix till a cookie dough consistency

3. Form into balls & roll in coconut shreds

4. Store in the fridge for up to 10 days (can be stored in the freezer for longer)
