Pumpkin Spice Raw Granola 🍂 (V, GF, Paleo, Sugar Free)

On my usual morning walk with my pup to the coffee shop down the street, the cool morning air at 6:30am left me feeling the hints of Fall. While we waited at the register, I noticed all the pumpkin spice drinks being advertised & felt inspired to create this seasonal recipe. I've been looking for something to top off my morning oats or to throw in some coconut yogurt, and I think this is it! This recipe is super easy, delicious, and amazing for your body (& can also be a hearty trail mix)! 

Ingredients:

  • 1 cup unsweetened shredded coconut

  • 1.5 cup raw pecans, chopped

  • 1 cup raw walnuts, chopped

  • 3/4 cup raw pumpkin seeds

  • 1/4 cup chia seeds

  • 2 tbsp. flax meal

  • 3 tbsp. pumpkin pie spice mix (cinnamon, ginger, cloves, nutmeg)

  • 1/2 tsp. sea salt

  • OPTIONAL: 1/4-1/2 cup of your favorite dried fruit

Method:

Simply combine all the ingredient in a bowl and mix. Store in an airtight container.
