Energy Bite Balls (simple, easy, delicious)

I’m always looking for a super quick & easy snack I can grab in the morning or take with me to work. I came up with these energy balls to give me a nutrient dense power boost! I made 3 different varieties, but the possibilities are endless. If you get around to making these, let me know what you think. They are vegan, gluten free, & paleo friendly.

The 3 varieties are:

Cashew butter, coconut flour, maple syrup, himalayan salt, covered in coconut shreds

Almond butter, coconut flour, maple syrup, himalayan salt, covered in hemp seeds

Peanut butter, coconut flour, maple syrup, himalayan salt, topped with vegan chocolate chip

Instructions:

  1. Combine 1 cup nut butter, 1/4 cup maple syrup, 1/2 cup coconut flour, & a pinch of salt in a bowl until you reach a cookie dough texture

  2. Form into bit size balls

  3. Roll in toppings

  4. Store in freezer
